Cocoa powder – For the richest chocolate finish, choose high-quality unsweetened cocoa powder.
Coconut milk – At least one and a half cups of milk must be full fat, canned coconut milk. You can substitute almonds, soy or oat milk for up to half a cup. However, any more than half a cup and ice cream will turn into ice milk.
Sweetener – I love pure maple syrup. White or brown sugar, coconut sugar or agave can also work. If you want a keto option, choose xylitol or granular erythrocyte alcohol.
Salt – A little salt is important for achieving the right flavour depth. If you are used to low-sodium desserts, you can try it, but I recommend including salt for the best results.
Vanilla (optional) – A small pinch of pure vanilla extract is a great addition to chocolate desserts, as the two flavors balance each other very well.

How to Make the Best Vegetarian Chocolate Ice Cream
Before opening, the canned coconut milk will be shaken vigorously. Then mix the coconut milk, cocoa powder, non-granny, salt and optional vanilla extract in a large cup.
Whisk everything together to dissolve all the cocoa powder into the liquid. This step can take up to two minutes.
Ice cream maker method: If you own an ice cream maker, prepare it in advance based on the manufacturer’s specific model. Many machines, including the Cuisinart one I use, need to freeze the base in advance.
Pour the stirred chocolate mixture into the ice cream manufacturer and stir until thick. Serve as a soft food, or freeze for about 15 minutes to get a stronger ice cream texture.
Expert tip: If some of your ice creams are frozen onto the base after stirring, just refrigerate for a few minutes and then use a spoon to scald it from the side.
Agitator method: For simple, unmixed ice cream, pour the stirred mixture into an ice cube tray. Freeze overnight or several days in advance and then thaw enough to allow the food processor or blender to handle the chocolate ice. If you have a high-speed mixer like Vitamix or Blendtec, you don’t need to thaw. Treat until thick and creamy, scraping the sides as needed.
Ninja Cream Method: Pour the maximum level of butter pint, 24 hours 24 hours. Remove the lid and place the pint in an outer bowl. Add the cream paddle and lock the bowl in place as directed by the manufacturer. Process on the Ice Cream setting, add more milk, and process it again. Service now.
