  • Boneless, skinless chicken breast (approximately 1.5 lbs) or chicken tender
  • Olive oil (or avocado oil)
  • soy sauce
  • Lemon juice (or lime juice taste)
  • Honey (or maple syrup)
  • Garlic cloves, chopped
  • Dried oregano (or Italian seasoning)
  • Black pepper

This marinated roasted chicken is juicy and delicious and perfect for busy weekdays. With a simple marinade of olive oil, lemon and honey, it offers a bold flavor that even picky eaters will love!

  • In a small bowl or large self-sealed bag, whisk together olive oil, soy sauce, lemon juice, honey, garlic cloves, oregano and pepper. Add the chicken to the bag and gently massage the marinade into the chicken. Place in the refrigerator and marinate for at least 30 minutes (or up to 4 hours).

  • Preheat the grill or barbecue pan over medium heat. Gently apply the coating with cooking spray to prevent sticking.

  • Drain the chicken and discard the marinade. Add the chicken to the preheated grill. Cook for 5-6 minutes on each side, or until charred and cooked.

  • Transfer the roasted chicken to a plate and rest for 5 minutes before serving. enjoy!
