  • Preheat the oven to 400 degrees. Arrange the baking tray with parchment paper.

  • In a large bowl, whisk together flour, baking powder, salt and ground lavender.

  • Use a pastry cutter or fork to cut the butter into flour mixture until the butter is similar to rough crumbs with pea-sized chunks.

  • In a separate bowl, whisk honey, heavy cream, eggs and vanilla well until smooth.

  • Pour the liquid mixture over the flour mixture and stir gently with a fork until just combined. Don’t over-mix! The dough should be slightly brittle, but secure together.

  • Transfer the dough to a slightly floured surface and knead 3 or 4 times to put it together. Smack the disk about 1 inch thick and cut it into 8 wedges.

  • Place the wedges 2 inches apart and place them on the prepared baking sheet. Brush the top with a little extra heavy cream.

  • Bake for 15-18 minutes, or until the scones turn golden brown. Cool on a baking sheet for 5 minutes and then move to wire rack.

  • While the scones are cool, prepare the glaze: whisk in a small bowl of powdered sugar, honey, heavy cream, lavender and lemon juice. If necessary, use extra lemon juice to adjust consistency.

  • Drizzle slightly cooled scones with glaze. Allow the glaze to be fixed for 10 minutes before serving.
