Instant Pot Chopped Chicken
I recently shared my slow cooker chopped chicken recipe and received many requests for instant pot recipes. So I tested it and I’m happy to share it with you. Although I love making it in a slow cooker, this method is the fastest for perfectly chopped chicken and is perfect for dining. You can use boneless, skinless chicken breasts or boneless thighs according to your preferences.
The ingredients you need
There are only a few ingredients in the Instant Pot that perfectly chops the chicken. See the exact measurements in the recipe card.

- chicken: If you prefer dark meat, use boneless, skinless chicken breasts or boneless skinless thighs.
- chicken soup: Use homemade or your favorite brand.
- Celery, parsley and bay leaves While cooking, infus the chicken with flavor.
- Kosher salt Season chicken so it’s not plain.
How to Make Chopped Chicken in Instant Pot

- Add all ingredients Go to the instant pot. Set the machine to high voltage for 10 minutes. Let it release naturally for 8 minutes (i.e., after 10 minutes, do not touch the pan). Then release quickly (i.e., move the switch from “seal” to “ventilating hole”).
- Chopped chicken: Remove the chicken from the pan, place it on the cutting board, and chop it with 2 forks or a blender. Remove celery and herbs from the pot and save the soup to make the soup again.

Add chicken, chicken broth, celery, parsley, bay leaves and salt to the instant pot. Close and seal the cover.

Set the Instant Pot to manual high pressure for 10 minutes. Let it release naturally for 8 minutes. Then release it quickly.

Remove the chicken, discard the solid, and you can save the broth for another purpose if needed.

Use two forks or a manual blender to chop the chicken and refrigerate for up to 4 days or up to 3 months.

It will last for 5 days in the refrigerator or for 6 months in the refrigerator. You can freeze it in a large container or ice cube tray for smaller portions.
