When I first tried to cook fries from scratch, I need to answer a few questions before sharing this recipe with you.
For example:
- Which potatoes make the best fries? Obviously, I had to try it with Russia and Golden Potatoes. (Sweet potatoes are also a different story.)
- Will soaking potatoes make crisper fries? I tried both ways so that I could taste the test side by side.
- Is fryer a good choice when it comes to crowd cooking? The answer is no. If you need to cook a large batch, make oven-baked fries.

I tested these fries with Russian and gold potatoes and found that Russia made crisper fries. That being said, I like both versions!
So, use your favorite potato variety.
From the seasoning, you just need to drizzle with salt of olive oil and salt, but a hint of garlic powder makes them taste better. If you want to add chili powder or black pepper, that’s OK too!


How to make French fries in a fryer
Step 1:
First cut the potatoes into 1/4-inch pieces. I like to slice the potatoes into thin slices and then cut them into thicker pieces.
If you prefer thick-cut fries, cut them into 1/2-inch pieces. (It takes longer to cook.)


Step 2: (Optional)
Most experts believe that soaking potatoes in cold water will produce crisper fries. If you have time, go ahead and place the sliced potatoes in a bowl of ice water. Let them soak for 30 to 60 minutes to help remove excess starch.
This step is optional as you can still make delicious fries without soaking. (I never soaked potatoes in weekday dinners; they were still delicious without this step.)
Soaking helps remove starch and makes the potatoes crispier. After soaking, drain and pat dry.


Step 3:
Add the fries to the bowl and drizzle the olive oil, salt and garlic powder. Toss and transfer to the fryer basket.
Arrange the fries in a single layer without any fragments touching each other. You may need to work in batches. (Don’t worry, you can reheat them all before adding crispy fries.)


Step 4:
Cook on 375ºF for 10 minutes. Depending on how much you slice the fries, they may be done after this initial cooking cycle.
Shake the baskets and test their ingenuity. 1/2-inch thick fries may take 2 to 4 minutes of air pancakes before serving. Set the cooked fries aside and repeat the cooking process with the remaining batches.
Once all the fries are cooked, you can return the first batch to the air fryer in batches and cook for another two minutes. This way, you can heat the fries.


Storage Tips
The remaining fries can be stored in an airtight container in the refrigerator for up to 5 days.
Reheat tips
To reheat the fries, add them to the air frying basket and cook at 350ºF for 3 to 4 minutes. This should be enough to heat them up again! There is no need to arrange them in a single layer for reheating.
- 1 pound Russian potatoes ,scrub
- 1 spoon Extra Olive Oil
- ½ teaspoon Fine sea salt
- ¼ teaspoon Garlic powder

Cut the potatoes into sticks about ¼ inch thick. Optional steps: Soak the potatoes in a bowl of cold water for 30 to 60 minutes. This helps remove some starch and makes them better, but they will still be delicious if you skip this step. Drain and pat dry before proceeding to the next step.

Transfer the potatoes to a large bowl. Drizzle them with olive oil and season with salt and garlic powder. Torturing potatoes well.

Place the seasoned potato chips in a single layer at the bottom of the air frying basket. (I had to work in two batches with a basket-style air fryer.) The more the potatoes are separated, the crisper they will be.

Cook the fries on 375ºF for 10 minutes and check them. At this point, the thinly sliced fries are probably ready for dinner. Thicker fries may require an extra 3 to 5 minutes of cooking time. Cook until the fries turn golden.

Repeat the rest of the fries. Once the second batch is finished cooking, return all the cooked fries to the basket and cook for another two minutes to make sure they are hot.

Heat it right away, as the fries will become softer as they cool. If you need to reheat fries, most air fryers have a 4-minute “reheat” button (set to 350°F), which will help them to crisp again.
Potato Notes: If you prefer, you can use gold potatoes instead of Russia. Gold potatoes tend not to be as crisp as Russian, but their interior is very creamy, so both potato varieties can give you a delicious effect.
