Fluffy Almond Flour Muffin (5 Ways)

Tired of breakfast eggs? You don’t have to turn to highly processed baked goods for a delicious meal in the morning. These almond flour muffins are a delicious choice for breakfast, snack or dessert. Plus, you can add your favorite blend to customizable muffins.

Most of the time, I have eggs, fermented vegetables, and even breakfast. While my breakfast choices are sometimes a little unconventional, I stick to high protein. Healthy fats to regulate blood sugar.

Not all of my kids have breakfast on sardines, so they prefer to toss some gluten-free muffins too. Over the years, we have made a lot of coconut flour muffins. These almond powder muffins are also free of cereals, paleo, sugar-free and dairy products.

If you omit arrow powder and coconut sugar, you can make them low-carb and ketones. If you are looking for keto muffins, swap the banana for yogurt.

Depending on your content, use a light almond flour or almond flour. I really like adding arrow powder to make these textures resemble regular wheat flour muffins. Even better, they can be customized to create a variety of flavors. Check out the list of optional flavors below the recipe for some ideas! By far, our favorite is the carrot cake almond flour muffin.

I don’t like my baked goods are really sweet, so this recipe is very sweet. If you want the muffin to be sweeter, taste and adjust the sweetener in the batter as needed.

Fluffy Almond Flour Muffin Recipe

These delicious muffins can be customized with your favorite ingredients. Great snacks, desserts, and even a quick breakfast!

  • Preheat the oven to 350°F. Place the 12-count muffin pan with silicone muffin liner, parchment liner or lightly grease with coconut oil.

  • In a large bowl, whisk together almond flour, arrows, baking soda, baking powder, salt and cinnamon.

  • In a separate mixing bowl, whisk the eggs, mashed bananas, coconut sugar, melted butter or oil, milk and vanilla. If using, add lemon juice or ACV here.

  • Pour the wet ingredients into the dry ingredients and stir gently until combined. Fold any add-ons (breries, chocolate, nuts, etc.).

  • Separate the batter evenly in the muffin cup. Bake for 20-22 minutes, or until the toothpick inserted into the center is clean. They should be yellow.

  • Cool in the pan for 5-10 minutes and transfer to wire rack. They are good warm with the coated grass-fed butter

  • Freezer tips: Let the muffins cool completely and store them in an airtight container or reusable bag in the refrigerator for up to 3 months. Reheat in the toaster or oven for quick snacks.
  • You can also use lemon juice instead of ACV if you want.

Almond flour muffin muffin

You can add any favorite mixture to the basic muffin recipe above. Try dried fruit or fresh fruit, nuts, chocolate chips or chopped coconut. Here are some different flavors of thoughts:

1. Chocolate Almond Flour Coffee

Add to basic recipes:

  • Replace cinnamon powder with 2-3 tablespoons unsweetened cocoa powder
  • Use ½ cup dark chocolate chips or chunks
  • If you like, add 1-2 tablespoons of maple syrup

Tip: Sprinkle some chocolate chips on top before baking the bakery-style look.

2. Carrot Cake Muffins

Add to basic recipes:

  • Add ¾ cup of finely ground carrots
  • Add ¼ cup of raisins (optional)
  • Add ½ tsp nutmeg + ½ tsp ginger
  • Swap bananas? The texture of the cup applesauce is smoother
  • Stir ¼ cup chopped walnuts or pecans (optional)

3. Salty cheddar and herbal muffins

Removed: Coconut sugar, cinnamon, vanilla and banana
Add to:

  • ¾ cup chopped cheddar cheese
  • 2 tablespoons chopped fresh chives or green onions
  • ½ teaspoon garlic powder
  • Optional: pinch red pepper flakes or cooked bacon

Tip: Great to serve with soup, or as a breakfast sandwich base!

4. Almond powder blueberry muffins

Add to:

  • Lemon zest from 1 lemon + 1 tablespoon lemon juice
  • ½ cup fresh or frozen blueberries (toss the almond flour into the almond flour before adding to the batter)
  • Optional: Bake with lemon juice + powdered coconut sugar, drizzle with a simple lemon glaze

5. Zucchini Almond Flour Banana Muffins

Add to:

  • ½ cup grated zucchini (squeeze out moisture first)
  • Stick to bananas as sweetener
  • Add a little cinnamon + nutmeg
  • Optional: ¼ cup chopped walnuts or mini chocolate chips
