These zucchini fries are one of the most delicious zucchini ways I have ever had. Crispy, tacky, absolutely sacred, paired with the Marinara side. Perfect for snacks, appetizers and even lunch!

How to Make Baked Zucchini Chips:

  1. Slice your zucchini. You want beautiful thin turns, but not too thin. A sharp knife should do the job. You will want the slice to be between 1/8″ -1/4″.
  2. Mix the dry ingredients together. In a small bowl, mix the flour, crumbs, parmesan cheese and seasoning together. Stir and combine.
  3. Beat the eggs. In a small bowl, whisk the eggs.
  4. Dip in zucchini chips. Dip the zucchini slices into the eggs and dip them into the Parmesan cheese mixture. Place on a parchment-lined baking sheet. After dipping in all the zucchini slices, drizzle with a little olive oil to make them crispy again.
  5. bake. Bake in a preheated 425 degree oven for 20 minutes, flip halfway, or until brown and crispy.

  • Preheat the oven to 425°F. Arrange the baking sheet with parchment paper.

  • Cut the zucchini into thin circles.

  • In a small bowl, whisk the eggs. In a medium mixing bowl, add panko, flour, basil and oregano, sea salt, pepper and parmesan cheese. Stir together until combined.

  • Cut each zucchini into eggs and dip the Panko mixture into the eggs, making sure to coat both sides. Place on a prepared baking sheet. Drizzle each zucchini with oil to make it more crisp.
