Coconut Flour Apple Cinnamon Muffin (Ceres Without)

I found this recipe for cereal-free cinnamon muffin made without applesauce. (Isn’t this the mother of invention?)
On this particular morning, I realized there were only five eggs in the refrigerator – not even enough to feed all of us. Especially when every child can eat three easily! I had coconut flour on hand, homemade applesauce and coconut oil, so I mixed them…vote!
The kids asked them to have a week in breakfast every day, and breakfast recipes were born!
Best Apple Cinnamon Muffins: Rest with Normal
I'm real here…I'm not always a great baker, I guess that makes sense because we don't eat grains often. Still, a cereal-free breakfast might mean a lot of scrambled eggs, and we all can only make it baked goods. Even now that my Hashimoto has disappeared and I have eaten some cereals (even gluten!), I still love coconut flour baked goods.
Get it right and hit the recipes that make moms and kids happy always feel great. These remind me of the apple pie, but with the muffin version.
If you haven't had coconut flour muffins before, know that they are a little smaller and thicker than a typical muffin. Still, they have an apple-inspired bread texture and aroma. They are full of protein and fiber, they are gluten-free and cereal-free. Not to mention all the great health benefits of coconut, as these muffins use both coconut flour and coconut oil.
These apple cinnamon muffins rotate regularly in our house and even kick off the breakfast section in my healthy mom recipe. Like almost all of my recipes, this muffin recipe takes 30 minutes or less to make, uses real food ingredients, and does not produce a lot of dirty dishes to wash.

Apple cinnamon…or whatever flavor you want!
I chose this combination of applesauce and cinnamon for convenience, but these muffins are so versatile. I even found that with some simple modifications I could turn this recipe into a coconut flour cinnamon apple pancake!
Using a muffin or pancake recipe as a basis, try these mixtures to change things:

Reduce applesauce by 1/4 cup and add excessive bananas before mixing

Stir ½ cup toasted chopped nuts like walnuts

Mix ½ cup fresh or frozen blueberries or raspberries

Add ½ cup chopped apples to add texture

Add 3 tablespoons of cocoa powder to make a muffin that is almost cake-like

Serve with chopped coconut before baking
- Skip the apples and make them Orange Cranberries or Lemon Blueberry Muffin!
Coconut flour apple cinnamon muffin
Hearty breakfast muffins can personalize your specific taste.

Preheat the oven to 400°F.

Lubricate the muffin pan with coconut oil, or use a silicone muffin cup or paper liner

In a large bowl, mix together eggs, applesauce, coconut flour, cinnamon, nutmeg, ginger, baking soda, baking soda, salt, salt, vanilla, melted coconut oil or melted coconut oil or melted butter, honey and milk. Let the muffin batter sit for 5 minutes to allow the coconut flour to absorb moisture.

Use 1/3 cup size to spatula the batter into muffin tins.

Bake for 12-15 minutes until the top turns golden and touch gently.

Let cool for 2 minutes, then drizzle the top of the muffin if needed and drizzle with extra honey.

Enjoy warmth or store in an airtight container for up to 3 days.

If you often need breakfast, try making a large amount of them and freezing them. Melt on the counter overnight before eating.
Try adding diced apples or cubes to enhance the apple flavor more. Fresh apples add more texture. If you prefer a rich bite, choose Smith Apple. Pink ladies or golden squids will provide a sweeter flavor, or just use whatever you like the most!
