Delicious and wholesome cinnamon raisin bread
There is nothing in the world that is more like homemade bread than homemade bread. .Fill the kitchen with delicious Yeasty flavor when baking. I’m sure a thick piece of warm, freshly baked bread coated with soft butter is one of the most satisfying sacred pleasures on earth.
This cinnamon raisin bread is very simple. The bread is light and tender and coated with soft raisins and chewy oats. It was slightly sweetened and each mouthful was filled with a warm cinnamon flavor. From the oven, toast or even for sandwiches that are absolutely delicious. Thick butter or cream cheese on top is the definition of one of the simple pleasures of life.

Ingredients for making cinnamon raisin bread:
- raisin
- yeast
- Warm water
- milk
- Rolling oats
- brown sugar
- Cinnamon
- butter
- Bread flour
- sea salt
- Egg

How to Make Homemade Cinnamon Raisin Bread:
- Soak the raisins. Place the raisins in a small bowl with a cup of hot water. Cover and let stand for at least 10 minutes to plump the raisins.
- Proof of yeast. In the bowl of a stand mixer, add warm water, 1 teaspoon brown sugar and yeast. Let it rest for about 5 minutes, or until the yeast is completely dissolved and begins to foam.
- Make the dough. Add the rest of the brown sugar, warm milk, oats, cinnamon, salt, butter and bread flour to the yeast mixture. Stir on low point for about 1 minute, or until everything combines. Add raisins. Using the dough hook, knead the mixture for 8-10 minutes, or until smooth and slightly sticky. If the dough is too sticky, add a little flour in the middle of the kneading time.
- Let the dough rise. Place the dough in a large greased bowl. Gently cover the lid and rest for about an hour, or until the dough grows and doubles.
- Form bread. Place the dough on the counter of flour. Form a rectangle and roll the dough up to form a bread. Place in a greased bread tray.
- Let the dough rise again. Gently cover and allow a second rise, or until it doubles again. At the end of the second rise, preheat the oven to 350 degrees.
- bake. Whisk together the eggs and a tablespoon of water. Lightly brush the top of the bread with egg wash, then place it in the preheated oven and bake for 40-45 minutes, or until golden brown, the bread sounds hollow when tapped. If browning is too fast, cover it with foil.
- enjoy! Remove from the oven and let the bread cool in the pan for 5 minutes. Remove from the pan and cool completely on the wire rack before slicing. When tightly wrapped with plastic wrap and aluminum foil, the toast can be frozen for up to 3 months.


Tips and suggestions
Alternatives and flavor variations
If you are not a fan of raisins, you can exclude them or replace dry cranberries or currants. But believe me – the raisins are softened and only add to the sweetness. They are really delicious!
Add nuts! If needed, you can add 1/2 cup of chopped walnuts to the dough at the end of the kneading time.
Make a warm spice flavor by adding 1/2 teaspoon of nutmeg to the bread dough.
For a soft crust, brush with melted butter when removing the bread from the oven.
How long does cinnamon raisin bread stay good?
If stored in an airtight container at cool room temperature, the remaining bread will remain fresh for about 3-4 days. For longer storage space, store it in the refrigerator or freeze it for up to 3 months. You can freeze the whole bread, or cut it into bread and freeze it. If you just want to pull out a piece or two or two for breakfast, this is great!
Why doesn’t my bread dough rise?
If your dough doesn’t rise, it may be because the yeast is old or the water is too hot and kills the yeast. The ideal temperature is about 100 degrees. When you add sugar and water to the yeast, you should start to see the mixture start to bubble and rise. If not, throw it away and use fresh yeast.
Can I double this cinnamon raisin bread recipe?
Yes! I usually like to double the recipe. I will serve one loaf fresh and freeze the other loaf for later. You can also turn the dough into smaller breads if you want. These gifts are great gifts during the holidays!

Wash eggs
- 1 Big Egg
- 1 gamble cold water

Place the raisins in a small bowl and cover them with a cup of hot water. Let the raisins plump for at least 10 minutes. Drain with a few tablespoons of flour and toss it to absorb any remaining moisture.

In the bowl of a stand mixer, add 1/3 cup warm water, 1 teaspoon of brown sugar, and sprinkle the yeast on top. Give it 4-5 minutes to froth and bubbles, then stir to completely dissolve the yeast in water.

Add warm milk, oats, brown sugar, cinnamon, salt, soft butter and bread flour to the bowl and mix on lows for 1 minute. Add raisins to the bowl. * (See Note) Use the dough hook to knead the mixer dough at low speed for 8-10 minutes to create a smooth, slightly sticky dough. Check half of the dough; if it’s very sticky, add a little flour.

Pour the dough into a greased bowl and cover it with a clean towel or plastic wrap. Let the dough rise in a warm place until the size doubles, about an hour.

When the dough rises, shape it into a rectangle and place it in a light grease 8 1/2″ x 4 1/2″ bread pan. Let the dough rise until the hills, look like a pillow, about 1 hour. At the end of the rise time, preheat the oven to 350°F.

In a small bowl, whisk together the eggs and 1 tablespoon of cold water. Wash with eggs. Bake for 40-45 minutes until golden brown. If the top of the bread is browned too quickly, place a piece of tin foil for the rest of the baking time.

*If you prefer a small piece of raisins, add them in before kneading, break them down and divide them into small pieces through the dough.
