The summers are hot around here and sometimes we need a cool summer snack. Like chocolate chip cookies and a cup of coffee in the form of it, it was a summer treat I made for me! Paired with cream, coffee flavor and crisp chocolate chips, it’s the perfect summer dessert.

This recipe produces four popsicles, so you don’t need a lot of ingredients. Perfect for when you have a little left of brewed coffee or partially coconut cream. While coffee lovers can definitely double the recipe!
Some recipes call for sweetened condensed milk or coffee creamer, but these are ingredients I’m trying to avoid. Instead, coconut cream is one of the celebrity ingredients here.
Ever opened a can of coconut milk and found a thick layer of cream on the top? That’s coconut cream. You can make your own coconut cream or use a BPA-free canned can. Using coconut cream, this iced coffee popsicle recipe tastes like a frozen coffee latte. hint: Don’t be confused with “coconut cream”, which usually adds a lot of sugar.
In addition to coffee and coconut cream, I also wanted to add chocolate chips to add crunch, vanilla flavor, and a small amount of sweetener honey. Chocolate makes the ice pop up with more mocha flavor. If you like black coffee, you may want to reduce the amount of honey, or if something you like is a little sweet, you need to increase the amount of honey.
Tips for making homemade popsicles
Popsicles are always the crowd in our family. I prefer homemade ones. When I make popsicles, I can add a variety of healthy ingredients like fresh fruit, healthy coconut milk and even probiotics. At the same time, I can ignore all the bad ingredients and adjust the sweetness level to my liking.
I make popsicles so often that I find it helpful to have a set (or two!) popsicle molds. These are what I use. However, there are many other options if you make larger batches or don’t have molds.
You can also use small cups, muffin tin wells, or even ice cube trays. Whatever you choose, just cover the filled aluminum foil and poke the stick directly through the foil into the unfrozen mixture. Wooden toothpicks are perfect for ice cube tray popsicles.
Brewing coffee
Since most of the flavor comes from coffee, it is important to start with good coffee. I like pure coffee beans or four kinds of sigmatic mushroom coffee (using code wellnessmama discount). Instant coffee is usually not that good (don’t come to my instant coffee fan!). I often make a batch of espresso in French media and use it for popsicles.

Chocolate Chip Coffee Popsicles are cold summer snacks made with coconut cream, coffee and chocolate chips to add crunch.

In a small bowl, stir together the coconut cream, coffee, honey, vanilla and salt until smooth.

Carefully pour the mixture into the popsicle mold.

Gently press the mold several times on the counter to help the mixture settle and allow any bubbles to escape.

Divide the chocolate chips evenly into the coffee mixture.

Insert popsicles into the refrigerator, place them in the refrigerator and let them sit until completely freezing, usually about 4 hours.

- If you have a hard time removing popsicles from the mold, just run them in warm water for a few seconds.
- My kids love the crispy chocolate chips on top, but you can mix them together as well. Simply let the mixture freeze a little first, and then stir the chocolate chips into the mold as the batter is consistent.
