Over the years, I’ve tried a lot of recipes for carrot cake bars and this is really the best of them. this Soft and moist texture, And irresistible fluffy!

Carrot Sticks Ingredients

Recipes require only a few basic ingredients without a cake mix!

You will need chopped carrots, applesauce, cinnamon, flour, cider or white vinegar, pure vanilla extract, salt, baking soda, sugar and optional raisins.

carrot – This recipe works with standard sizes and baby carrots. If the vegetables have not peeled off yet, make sure to peel them completely.

For interesting changes, try purple, red, yellow, or white carrots instead of orange.

Applesauce – Feel free to go with sweet or unsweetened applesauce. Or replace it with equal amounts of mature mashed potatoes or drained pineapple.

flour – I have successfully baked these carrot recipes with whole grain spelled flour, white flour, oat flour and gluten-free all-purpose flour.

If you prefer a ketone option for almond flour, see below. I don’t recommend coconut flour or whole wheat flour here.

Cinnamon – A teaspoon of high-quality cinnamon powder adds flavor and adds sweet carrots.

If you have ground ginger and cloves on your hands, stir each to make it deeper.

sugar – Thanks to the natural sweetness of the applesauce and spices, the whole recipe only needs half a cup of sugar.

White sugar, brown sugar or unrefined coconut sugar are all good choices. For bars without sugar added, select granular red thrust or xylitol.

You can technically replace pure maple syrup or honey. However, the texture is a bit glued in terms of this alternative, so I don’t recommend it.

Optional ingredients

Add ins – I love the raisins in my carrot cake, so I almost always mix with the dry ingredients in the fourth cup. You can add chopped dried pineapple, date or figs.

Stir a few diced nuts, such as walnuts, almonds, pecans or chopped coconuts, if you prefer. No measurement required!

Protein powder – For high-protein carrot sticks, you can have breakfast and exchange the third cup of flour with unsweetened protein powder.

Oil – Including a fourth cup of vegetable oil or melted coconut oil will increase richness and create a lighter texture.

For healthy carrot cake sticks that are oil-free, low-fat and low-calorie, you can substitute other applesauce or mashed potatoes.

Homemade Cream Cheese Frosting

This is a recipe for the real creamy, fluffy carrot cake frosting I’ve ever tried. It pairs with the moist cake sticks below and each bite reminds you of carrot cake cheesecake!

Feel free to add powdered sugar, coconut sauce, store-bought vanilla icing or almond butter to the carrot cake bar if you prefer.

Cream cheese frosting

  • 4 oz cream cheese or vegetarian cream cheese
  • 2 oz butter or plant-based alternative
  • 1 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • Optional milk or water

Let the cream cheese and butter rise to room temperature to make them softer and easier to mix with a blender, stand mixer or fork. Beat it into powdered sugar in half a cup at a time. Then whip in the herbs until smooth. Dilute the frosting with one teaspoon or two milk or water.

This cream cheese frosting recipe produces about a cup from scratches, which is the perfect amount of cover all carrot squares.

I usually double the recipe and use the remaining frosting on a chocolate zucchini cake or four-ingredient easy cinnamon roll.

How to Make a Moist Carrot Cake Bar

Read recipe instructions and collect your ingredients.

Grease an eight-inch square pan or line it up with parchment paper on the bottom of the pan.

Or, if you want a thinner stick, add oil on the bottom of the pan or a nine by thirteen inch rectangular pan. Set this baking tray aside.

Preheat the oven to 350 degrees Fahrenheit.

In a large mixing bowl, stir chopped carrots, applesauce, vinegar, vanilla extract and optional oil.

Stir flour, cinnamon, salt, baking soda, sugar, optional ginger and cloves, and optional raisins to form a batter. To prevent the thick and fudge texture, it is important not to over-hit the ball.

Sprinkle the carrot cake mixture evenly in the prepared pan with a spatula or spoon.

Place the pot on the center rack of the preheated oven. Bake in an eight-inch pan for 30 minutes or 15 minutes for the pot rod.

At the end of the baking time, the toothpicks inserted into the center of the pot should be mostly clean.

Cool before using cream cheese frosting or topping frosting of your choice.

Once cooled and matte, cover the baking tray loosely with a cloth or paper towel and refrigerate for optimal freshness.

Tip: If you can wait, the texture and taste of the next day are even better!

After one day, refrigerate leftovers in a covered container for up to five days. Or slice and freeze for about two to three months.

  • 1/4 cup Oil or other fat-free apple sauce
  • 2 TSP vinegar
  • 2 TSP Pure vanilla extract
  • 1 1/2 cup flour (See above for the ketone version)
  • 1 1/2 TSP Cinnamon
  • 3/4 TSP Salt
  • 1/2 TSP baking soda
  • 1/2 cup sugar or packaged coconut sugar or xylitol
  • 1 pinch ground (Optional)
  • 1/4 cup raisin (Optional)
  • 1 A small amount Chopped coconut, crushed walnut or pecan (Optional)
  • 1 recipe Cream cheese frosting Top or your favorite frosting or topping
  • To make a carrot cake stick, first preheat the oven to 350 f. Coat the 8-inch square pan or line the bottom with parchment paper. If you prefer thinner strips, use a pot or a 9 x 13-inch baking tray. Whisk all ingredients in a large bowl until well combined. Diffusion into the pot. Bake in an 8-inch pan for 30 minutes or bake on a pan for 15 minutes. When the toothpick inserted into the center is mostly clean, the rod will be completed. Cool completely before frosting.
