Why We Love This Avocado Salad
I love pasta salad. They are easy to make, travel well, make leftovers, and you can finish a meal in a bowl. This avocado pasta salad is no exception.
There is a lot of love in this bright and delicious salad. It’s easy to make, nutritious, stuffed, but not too heavy and thrown into the delicious cilantro lemon sauce. Creamy avocado combines with sweet and juicy tomatoes, chewy pasta, crispy cucumbers and salty feta. The seasoning is easy and absolutely full of flavor. This is a southwestern-style pasta salad, and we’re here for that.

The ingredients you need to make this avocado pasta salad:
- pasta– The small Ditalini pasta is perfect. Orzo or macaroni can also work well.
- avocado– Look for a good ripe avocado that is given when squeezed lightly, but make sure it is not too soft.
- Cherry tomatoes– We absolutely love the cherry tomatoes in pasta salad! Cut in half and you’re fine.
- cucumber– We like to use English cucumbers as there is no need to peel or remove the seeds.
- Red onion– Red onions add spicy crunch, but green onions also work.
- Feta cheese– Feta adds a delicious savory flavor to the salad.
Coriander Lemon Sauce:
- coriander– Fresh coriander brings a bright flavor to this seasoning.
- lime– You will use juice and enthusiasm in this recipe.
- olive oil– Avocado oil is great here too – In fact, any neutral flavored oil will work properly.
- Apple cider vinegar– Red wine vinegar can also be used here.
- Honey– Honey adds a delicious subtle sweetness to the salad.
- Garlic powder– Garlic powder adds a delicious flavor to the seasoning. You can substitute fresh garlic if needed.
- Salt and black pepper– Add season.


How to Make Avocado Pasta Salad:
In addition to a healthy and flavorful avocado salad, it is also very easy to make! There are basically three steps.
- Cook pasta. We love Ditalini in this recipe because it will cook soon and my kids love it!
- Prepare vegetables. Slice the avocado and red onion into thin slices, quarters, slice thinly, and cut the tomatoes in half. We used cherry tomatoes, but any tomato would work. This recipe is perfect for anything you have on hand! Replace the red onion with green onion. Or, if you have chili or corn, they can also be added!
- Mix seasonings. Our cilantro lime seasoning was delicious. It will last in the refrigerator for a week, so many times I will mix a batch of double batches so that we have it all week.
- Throw salad together. Add pasta, vegetables and cheese to the bowl. Drizzle with seasoning and throw away. Service and enjoy!

The cut avocado will last for 3-4 days. It may oxidize and lose its visual appeal, but it is not harmful. However, dressing will help slow down the oxidation process. You can also diced avocado juice to help delay browning.
If you don’t want to use pasta in this salad, you can use a variety of cereals here. Rice, quinoa or barley makes a great replacement. You can also use other pasta dishes such as Orzo or Macaroni.
Yes! My favorite way to do it is to stir the seasoning and then stir it into pasta, cucumber, red onion and tomatoes. The flavor of the seasoning actually improves with the cold. Just before serving, toss with diced avocado and feta.

Cook pasta. Cook Ditalini pasta according to the packaging direction; drain and cool while preparing other salad ingredients.

Prepare agricultural products. Rinse the cucumbers and cut lengthwise in half. Cut each half lengthwise again, then cut into quarters. Cut the cherry tomatoes in half. Cut the red onion in half and cut it into very thin strips. Add all of this to a large bowl.
