Healthy Peanut Butter Triceratops
I will stick to the classics.
Today’s recipes are for healthy homemade Galog, those thick peanut butter pie and butter crispy crust and smooth chocolate paint.
I didn’t give Girl Scouts all the fun until they brought healthy Girl Scouts cookies (or at least vegetarian Girl Scouts cookies TAGALONGS).
At press time in 2025, the Girl Scout Peanut Butter Pie, courtesy of ABC Baker, was vegetarian. However, this is not the case with Tagalon provided by Little Brownie Baker. The area you live in will determine which options you can use.
Both options include unhealthy hydrogenated oils.
So last weekend, I set up a DIY Girl Scout Cookie Factory in the kitchen.
By late at night, my factory successfully stirred a batch of homemade healthy mints, caramel delites, and tagalongs.
The best part? All cookies are whole grains, gluten-free, trans-fat-free, dairy-free and egg-free.
I will never understand why young girls who care about raising healthy continue to produce and promote mechanisms that contain arterial blockage of hydrogenated oil when alternative baking methods exist.
Yes, cookies shouldn’t be healthy food, but why keep trans fat? Even Oreos got rid of the hydrogenated oil in the cookies.
Seriously, you won’t miss the trans fat in these healthy Girl Scout cookies.
They’re just Really good.

raw material
The recipe calls for peanut butter, chocolate chips, almond powder, sweeteners of choice, salt, baking soda, water and pure vanilla extract.
Peanut Butter – Feel free to use regular or natural peanut butter.
For peanut-free alternatives, almond butter, sunflower seed butter or cashew butter work. Refrigerate the nut butter until ready to use as you want it to be firm.
Almond powder – Fine almond flour or flour-free almond meals are easily available at regular grocery stores, Trader Joe’s, Target, Whole Foods and Health Food stores.
Allergic to almonds? Use this simple recipe as the basis for vegetarian sugar cookies.
chocolate – Do you choose semi-sweet, milk, oat milk or dark chocolate chips.
Sweetener – I love unrefined pure maple syrup here. Honey, powdered sugar and agave can also work.
To create a Keto Girl Scout cookie, use stevia or pink red threal instead.

How to Make Healthy Girl Scout Cookies
The first step is to collect your ingredients. Preheat the oven to 325 degrees Fahrenheit.
Store peanut butter in the refrigerator because you want it to be solid rather than runny nose.
Mix all the dry ingredients except the chocolate chips in a large mixing bowl. Stir well to mix evenly with baking soda and salt.
Add wet ingredients, minus peanut butter. It looks dry at first. Keep stirring for at least one minute, breaking down large pieces of dough as you go.
Punch the big ball into a big ball, or transfer the cookie dough into a large Ziploc bag and then pierce the ball into a ball from the inside of the bag. I found the second option to be much less and easier to form without the dough sticking to your hands.
From the inside of the bag or between two parchment paper, use a rolling pin to roll the almond cookie mixture thinly into a rectangle about 1/8 inch thick.
Use a cookie cutter or the edge of a small glass to cut the circle or the shape of your choice.
Reroll all remaining dough scraps to avoid wasting.
Place the cut of raw cookies on a greased baking tray or silicone baking mat and bake on the center rack of the preheated oven for twelve minutes.
Let the baked cookies cool and transfer to a parchment lined plate. Refrigerate or freeze until a cold occurs.
Sprinkle peanut butter on top of each cookie base and return to the refrigerator. This step is important because it ensures that the peanut butter does not melt when exposed to the hot chocolate sauce next step.

Chocolate paint
Add chocolate chips to the top bowl in a microwave safe dish or double pot.
Melt the chocolate carefully and check slowly to avoid burning. If you’re new to melting chocolate, you may find it helpful to read the detailed instructions in my Chocolate Covered Strawberry Recipe.
Once the fries are completely melted, I find that stirring in just one teaspoon of vegetable or coconut oil will produce a smoother sauce. However, this ingredient is optional.
Using a spoon or fork, place a peanut butter into the chocolate. Return to the parchment lined plate and repeat this step with all remaining cookies.
Refrigerate to place the chocolate paint and then eat and enjoy.
Store any remaining tagalongs in a cool, dry place or in a refrigerator or refrigerator.

This recipe is adapted from my vegetarian peanut butter cookies and these keto cookies.
tagalong cookies
- 1 cup Almond powder
- 1/8 TSP Salt
- 1/8 TSP baking soda
- 2 Spoon Pure maple syrup Or honey, or stevia equivalent
- 2 TSP water Or oil
- 1/2 TSP Pure vanilla extract
- 1/2 cup Peanut butter Or allergic friendly submarine

Preheat the oven to 325 F. Cool the peanut butter in the refrigerator. Stir the cookies in a mixing bowl and stir wet (minus peanut butter). Will do it at first. Continue to stir for a minute or two, breaking down the large clumps until it resembles a cookie dough. Transfer to a large Ziploc bag and pierce a ball from the bag. Still in the bag or between two parchment paper, use a rolling pin to spread the dough about 1/8 inch thick. Cut circles or shapes with a cookie cutter or small glass edge. Bake for 10 minutes. Let cool, then refrigerate or freeze until a cold is caught. Spread peanut butter on each cookie base. Return to the refrigerator as you carefully melt the chocolate and then stir the optional oil.
