Grilled asshole chicken and mango avocado salsa

Juicy grilled chicken thighs (or breasts) are seasoned with asshole spices and topped with cool and refreshing mango avocado salsa (Avocado Salsa) – the perfect summer dinner.

Roasted asshole chicken
My husband loves bastard chickens, so I started making a bold, delicious and easy version that suits any night of the week. I used boneless, skinless chicken thighs for maximum juiciness, but chicken breasts work too if you like something thinner. I don’t have a huge list of spices, but keep it simple with my favorite asshole seasoning and a hint of brown sugar. Not only is this dish delicious, it can be roasted perfectly and comes with a sweet, cooled mango avocado salsa, but it’s also delicious – it’s also high in protein, low in carb, gluten-free and dairy-free. It’s a weekday win and perfect for summer grills or your healthy chicken dinner list.
What are the spices in the asshole seasoning?
Asshole seasoning gets heat from Scottish hat chili. It may also contain salt, black pepper, thyme, spice powder, shallot, brown sugar and nutmeg depending on the recipe or spice mixture.
A few years ago, after returning home on vacation in Jamaica, I longed for assholes. My friend introduced me to Walkerswood mild Jamaican bastard seasoning made in Jamaica and is now my go-to. Very good!

The ingredients you need

- olive oil Coat the chicken to add moisture and help the seasoning stick to the meat.
- Salt smell
- brown sugar Balance the calories of asshole seasoning.
- Bastard chicken seasoning: Using pre-made seasonings is a great shortcut to eliminate the need for multiple spices.
- Chopped garlic Added a scent to the friction.
- Chicken thighs: Use scissors to trim excess fat from boneless, skinless chicken thighs.
- Mango salsa ingredients: Mango, avocado, red onion and jalapeno are all seasoned with lemon juice, coriander and salt.
How to roast a bastard chicken
The chicken is marinated in just 30 minutes, but keep it for up to 24 hours at any time for a better flavor. See the recipe card at the bottom for printable orientation.

No grill? no problem!
Follow the same instructions, but use a baking tray on the stove instead of an outdoor grill.
Child-friendly tips
To make this dish suitable for picky eaters, I seasoned a few pieces of chicken with salt, garlic powder and a little brown sugar before grilling. It’s simple, delicious, still paired with mango avocado salsa or paired with some rice or fruit on the side.

- chicken: Use asshole seasoning on chicken breast for a slimmer selection and follow the grilled chicken breast instructions. You can also use chicken thighs on your thighs, but you need to increase your cooking time. Check that they are done using an instant reading thermometer.
- mango: Replace it with diced pineapple.
- Spicy Sasha: Because of the spicy chicken, I prefer to keep salsa gentle. However, if you want a more fragrant salsa, keep the seeds and ribs in the jalapeno (or use serrano).
- Hate cilantro? Omit it.

Storage
These assholes’ thighs are perfect for dining as they last for a few days and are well frozen. Leftovers are universal and can be eaten in many ways.
- refrigeration Chicken for up to 4 days. The salsa is the best day so the avocado won’t turn brown, but it lasts 2 days for an airtight container.
- Reheat: Microwave chicken until heated and cooled with salsa.
- Freeze tHe used an airtight container for chicken chicken for up to 3 months.

Dry the chicken and add it to the oil. Spread it in oil and add salt, brown sugar, asshole seasoning and garlic. Spread the chicken in the spices and marinate for at least 30 minutes.

The pickled salsa is salsa sauce. Add all the ingredients to a small bowl and mix together. Cover with plastic wrap and refrigerate until ready to use.

Preheat the grill or baking tray to medium heat and then gently oil the grate. Gently spray the chicken with non-stick cooking spray. Transfer the chicken evenly to the grill. Cook for 3 minutes until the chicken is easily released from the grill. Flip the chicken and cook for another 3 minutes until the chicken is easily released from the grill. Continue turning every 2-3 minutes until the chicken is cooked, a total of 165 degrees Celsius (10-15 minutes), depending on the size of the thigh.

Remove from the grill and top with salsa sauce.
