Strawberry Cream Pie is a refreshing, lightweight and sweet dessert that celebrates the sweetness of strawberries without excessive sugar. This enjoyment comes with a creamy filling, juicy berries and a flaky crust, perfect for spring and summer parties.

In a medium pan, mix together sugar, corn starch, flour and salt. Stir the milk gradually. Stir constantly over medium heat until the mixture boils. Reduce heat and continue to cook, stirring until thickened.

In a small bowl, restore the eggs by adding a few tablespoons of hot egg ust mixture therein, then stir gently until thoroughly combined. Whisk the egg mixture back to the pan. Stir and heat until boiling. Remove from heat and cool. After cooling, put it in the refrigerator to cool thoroughly.

After refrigeration, stir the mixture with a stirrer or electric stirrer until smooth. Then, use a spatula to gently fold in the whipped cream and vanilla.

Sprinkle toasted almonds (if used) on the bottom of the toasted pie crust. Spoon the prepared cream fills and spreads evenly.

Cut 3 cups of strawberries in half and place on a cream layer.

Crush the remaining 100% strawberries and mix with water in a small pot. Cook over medium heat for 2 minutes. Filter the mixture and retain the juice.

In another bowl, combine sugar and corn starch. Gradually add warm juice. Return to the pan, cook, stirring, until the mixture is thick and clear. Add food coloring (if used). Cool slightly.

Pour the glaze over the strawberries in the pie. Refrigerate for 2-3 hours before serving.
