Key Ingredients
Oatmeal – Pair it with quick oats, old-fashioned rolling oats, and even instant oats. For the best chewy quality and sticks that are held together, do not use steel oats.
If you make recipes for someone who follows a gluten-free diet, buy gluten-free oats or alternative quinoa flakes.
strawberry – You can use fresh or frozen strawberries. Thaw the frozen berries before use and wipe off excess water with a paper towel. I don’t recommend freezing dried strawberries for filling, although you can sprinkle a small amount on top if you prefer.
flour – This recipe can be used with whole grain spelling flour, oat flour, gluten-free all-purpose flour or the classic all-purpose white flour. Almond flour can produce a brittle effect (although delicious) and coconut flour should be avoided due to its drying properties.
sugar – White sugar gives you a crisper oat filling, while brown sugar turns into a soft bar. If you want to add sugar-free strawberry oatmeal bars, choose xylitol or granular erythrol.
The sweetener in the strawberry filling can be any dry or liquid sweetener, including conventional sugar, honey or pure maple syrup.
Oil or butter – Sunflowers, vegetables or melted coconut oil are all great choices. Butter or dairy-free alternatives can also be used.
Using salt and unsalted butter is your choice because I tried both ways and the difference is undetectable.
Other ingredients – The recipe also calls for baking powder, corn starch or arrow powder, a little salt and cinnamon powder to taste.

How to Make Strawberry Oatmeal
- Collect ingredients first.
- Preheat the oven to 350 degrees Fahrenheit. Lined with parchment paper on a square eight-inch baking sheet, or grease well.
- Whisk oats, flour, cinnamon, salt, sugar and baking powder in a large mixing bowl.
- Stir the oil or butter and press two-thirds of that dough into the pan very firmly. Keep the remaining dough.
- Mix the berries, corn starch and a tablespoon of sweetener together and press it on top of the mixture in the pan. Sprinkle the reserved oat dough on top and press firmly.
- Bake on the center rack in the oven for 45 minutes. Let cool, then refrigerate for an hour or longer before cutting, during which time they will be fairly firm.
- The strawberry cube itself is delicious, but drizzle peanut butter or melted coconut sauce is even better. Or sprinkle powdered sugar or chopped coconut on a snack bar.

To make strawberry granola bars, preheat the oven to 350F first. Grease baking pan eight inches, or line up at the bottom with parchment. In a large bowl, stir the oats, flour, cinnamon, salt, baking powder and sugar. Stir the oil or melted butter and press 2/3 of the dough firmly into the pan. Stir berries, corn starch and maple syrup in a medium bowl. Fill this berries on top of the dough in the pan and sprinkle the remaining dough on top. Press firmly again.
