The snacks at our home are more popular than homemade pretzel bites. Soft, chewy, buttery, salty little pieces delicious. It is almost impossible not to eat. I’ve tried many different recipes and techniques over the years, but these pretzel bites are the best.

Not only are they downright delicious, but this nonwoven variety is quick and easy–and still gets all the flavors and textures from the classic method. The outside comes out golden and chewy while making the inside soft and fluffy. Immediately after removing them from the oven, use melted butter and voila. You have the most delicious little taste that comes out of the oven. Your child will declare you the best chef in the world. Ingredients You Need to Make This Soft Pretzel Bite Recipe:

  • water– Heat is enough to activate yeast 100-110 degrees.

How to Make Pretzel Bite Dough:

  1. Proof of yeast. In the bowl of an electric mixer, add warm water, yeast, brown sugar and melted butter. Let it sit for 5-10 minutes, or until the mixture is good and bubbles. The water should be warm to between 100 and 110 degrees. If the yeast is not bubbled, then the yeast may not be good and you will want to restart the fresh yeast. If you are using instant yeast, you don’t need to activate it. You just add all the ingredients to the bowl and start mixing. However, you want the water to be a little hot 120-130 degrees.
  2. Knead the dough. Once the yeast is properly activated, you will add salt and flour and start mixing the dough. Start with smaller flour, you can always add more later. Knead for 3-4 minutes. The dough should look smooth and start pulling away from the side of the bowl. At this point, touch the dough with your fingers. If it’s still sticky, add one tablespoon of flour at a time. Don’t add too much flour or you’ll end up with a hard dough. You want it to be soft, but don’t be too sticky.
  3. Let the dough rise. Transfer the dough to a greased bowl (or lazy like me, put it in a blender) covered with greased plastic wrap or a clean kitchen towel. Allow to rise at room temperature for about an hour, or until the dough doubles in size. Time will vary depending on the kitchen temperature. To speed up the process, you can place the bowl in a warm oven. For this, I usually only preheat the oven to 400 degrees. After one minute, turn off the oven. Raise the bowl in the oven.
  4. Shape the dough. Once the dough is raised, pour it onto the counter of flour or grease. Divide the dough into 8 equal pieces and roll each piece into a long rope about 20 inches long. Using a knife or bench scraper, cut each rope into 1-inch pieces.

How to make a pretzel bite:

Pretzel bites in baking soda. In a small bowl or liquid measuring cup, stir together 1 cup of hot water and 1 tablespoon of baking soda. Dip the pretzel bites in baking soda and place on a parchment lined baking sheet.

Wash with eggs. In a small bowl, whisk together 1 egg and 1 tablespoon of cold water. Using a pastry brush, wash with eggs and gently brush all pretzels.

Sprinkle with salt. After washing the brush with eggs, immediately sprinkle the pretzels with salt.

Bake pretzels. Bake pretzels in a 450 degree oven for 10-12 minutes, or until golden brown.

Brush with melted butter. Once the pretzels come out of the oven, brush the pretzels freely with melted butter.

To make a cinnamon sugar pretzel bite, follow the instructions to dip the dough in the baking soda bath and use an egg wash brush, but do not add pretzel salt. Bake as directed. In a small bowl, mix 1/4 cup sugar and 1 tablespoon ground cinnamon together. After removing the pretzels from the oven, brush them with butter immediately and roll them into a cinnamon sugar mixture.

How to make homemade pretzels twist

You can use the same recipe for twists and turns! If you want to make pretzels zigzag instead of pretzel bites, divide the dough into 12 slices. Roll each piece into a rope. Before shaping, dip each rope into baking soda. To create a twist, create a U-shaped shape with a rope. Next, tie the ends together and twist them once or twice. Restore the end to the bottom of U and press Adhesive. Wash the brush with eggs for 12-15 minutes or until golden brown.

If the dough looks too sticky, add 1 tablespoon of flour at a time and continue kneading the set mixer. It should be soft, but not sticky.

  • You can transfer to an oiled mixing bowl, or if you are like me and don’t want to wash another bowl, just remove the dough hook and cover the bowl with a plastic wrap or a clean dry towel. Allow the dough to rise at room temperature for 1 hour, or until double in size.

  • Preheat the oven to 450°F. Arrange the baking sheet with parchment paper. Set aside.

  • Once the dough has risen, remove it from the bowl and place it on a clean surface. Use a bench scraper to divide the dough into 8 equal pieces. Roll each piece into a long rope (about 21 inches). Cut each dough rope into 1-inch pieces.

  • Pour 1 cup of hot water (hot tap water plant) into a small bowl. Add baking soda and stir to combine.

  • Dip each dough into baking soda solution and shake slightly to remove excess liquid, then place pretzel bites on a sheepskin-lined baking sheet. Place them on a baking sheet about an inch.

  • In a small bowl, stir the eggs and cold water. Wash the top of each pretzel with eggs and sprinkle with coarse salt.

  • Bake until golden brown, 10-12 minutes. Remove from the oven and brush with melted butter. Serve with your favorite dip. enjoy!
