Pasta salad is one of my favorite summer meals and one of the products from Potluck because they are easy to fill, feed the crowd, all of which are thrown into a delicious bowl. While I have some delicious diet salad recipes, if you push me down and force me to pick up your favorites, this recipe may go to the top.
This Tortellini pasta salad is available in every way. Chewy tortillas are sprinkled with tender chicken, crispy veggies, salty bacon and juicy oranges. .The whole glorious thing is thrown into a sweet and rich flavor that can be eaten with a spoon. I’ve made it fresh and made it ahead of time and refrigerated. Either way…it’s an absolute crowd!

Ingredients You need to make this amazing tortellini pasta salad:
- tortellini pasta– We like to use fresh refrigerated Tortellini. You can also use regular pasta or barbecue pie to work well.
- chicken– This recipe requires chicken breasts you cook in a skillet. But barbecue restaurants are also a simple and delicious choice.
- bacon– Any form can work here. Regular, thick cut, turkey…We love bacon because it’s both good and fast.
- spinach– We used baby spinach. Give it a rough chop before adding it to the salad.
- tomato– Our favorite cherry tomatoes in this salad. Just cut them in half and you’re good.
- cucumber– We always use English cucumbers as they don’t have to peel or remove seeds.
- Mandarin orange– We use canned oranges packaged in juice.
Sweet and rich dressing:
- sugar– Garlic sugar adds sweetness and helps to add a rich dressing.
- Red wine vinegar– This is our favorite, but you may be able to replace it with white or apple cider vinegar.
- Oil– We like to use avocado oil.
- Salt– Regular sea salt is our first choice.
- chili– Added subtle smoky scent.
- Oregano– Oregano adds earthy flavor to the seasoning.


How to make Tortellini pasta salad:
- Cook pasta. Depending on the packaging direction – this will vary if you use fresh or dry pasta.
- Cook chicken. Season the chicken breast with salt and pepper. Heat a large skillet over medium heat and drizzle with oil. Cook on each side for about 4-5 minutes until golden outside and no longer pink. Remove the cutting board. Allow cooling before torture.
- Cook the bacon. Cook the bacon in the pot used to cook the chicken, or according to the packaging direction. Cut into bite-sized pieces.
- Cut vegetables. Give spinach a coarse cut, cut the tomatoes in half, and then cut them into quarters. Drain the oranges.
- Make seasonings. In a small pot, bring the sugar and vinegar to a boil and stir until the sugar dissolves. Remove from heat and add the remaining ingredients. Stir and stir.
- Throw the salad. Add pasta, chicken, bacon, vegetables and oranges to a large bowl. Drizzle with seasoning and tossing to combine. If needed, sprinkle fresh cracked black pepper.

This is the perfect brand! Although freshly made delicious dishes, they are equally delicious and cool. You can make it in the morning and then relax for a quick dinner or light meal!

In a large pot, cook tortellini according to the direction of the packaging, making sure not to overcook. Drain and rinse with cold water.

Season the chicken with salt and pepper. Heat a large skillet over medium heat and drizzle with olive oil. Add the chicken and cook on both sides for about 4-5 minutes, or until the center is no longer pink. Rest for 5 minutes and then cut into bite-sized cubes. Set aside.

Cook the bacon in the skillet used to cook the chicken until browned and crispy. Set aside to cool and cut into small pieces.

Drain the Mandarin oranges. Roughly chop the spinach, cut the cherry tomatoes in half, and then cut the cucumber into quarters.

Assembly: In a large bowl, add tortillas, chicken, bacon, mandarin oranges, spinach, cherry tomatoes and cucumbers. Stir gently to combine.
For seasonings:

In a small pot, bring sugar and vinegar to a boil. Convert the heat to medium and stir until the sugar dissolves. Remove from heat and add oil, salt, chili powder and oregano. Stir until combined.
