Sometimes the best things in life are simple. These cucumber sandwiches definitely prove this! Just cucumber, simple (but incredibly delicious!) vanilla cream and bread. But those cute little sandwiches are addictive. Lightweight, delicious and refreshing – they are perfect for lunch, snack or party food. Not to mention cheap ones, come together quickly!
Listen, you don’t have to keep your food delicate and fingers here either. I also grabbed some beautiful whole wheat bread with plenty of cream cheese on top and topped it with plenty of sliced cucumbers. So delicious, so satisfying. So whether you are supporting yourself or the crowd, these cucumber sandwiches are guaranteed!

The ingredients you need to make a cucumber sandwich:
- Cream cheese– We used regular cream cheese.
- Fresh dill and chives– There are only a few flavors here, so using Fresh is important!
- Regular Greek Yogurt– This will lighten and soften your cream cheese.
- Lemon juice– Added a nice citrus soup. We used fresh lemon juice!
- Salt and pepper– Add season.
- British cucumber– You want to use cucumbers in English here. Their seeds are small and have thin skin, so there is no need to peel or shed.
- White or wheat sandwich bread– You want to use a nice soft sandwich bread for these cucumber sandwiches.

How to make a cucumber sandwich:
- Make vanilla cream cheese. Place the softened cream cheese in a bowl. Chop the herbs and add them to the bowl with Greek yogurt, lemon juice, salt and pepper. Stir well, taste, and add more seasoning if needed.
- Cut into thin slices of cucumber and trim the bread. Grab the cucumbers and slice them thinly. I got even slices with mandolin. Trim the crust from the bread if needed.
- Assemble the sandwich. Spread each slice of bread with a thin cream cheese mixture. There are several layers of thinly sliced cucumbers on the top. Add slices of bread, cream cheese side. Cut into triangles if needed.
- Enjoy now!

How long will the cucumber sandwich last?
These small sandwiches are best served within an hour of making them. Otherwise, you risk the cucumber becoming wet. However, if you want to plan ahead, you can do the cream cheese sauce a day or two in advance.

For fun and delicious changes, use the cocktail rye bread. Add a nice smear of vanilla cream cheese, top with a few slices of cucumbers and slice them with fresh dill.
Spread the cream cheese mixture over the tortillas. Top with thinly sliced cucumbers and roll them tightly. Cut into 1-inch circles for use in cucumber windmills.
Add a layer of sliced radish with the cucumber.
