Grilled zucchini and lime marinade

A simple and delicious veggie side dish is one of my favorite ways to enhance any meal. This wonderfully roasted zucchini is thrown into a lime marinade filled with seasonings. The end result is a rich and flavourful dish that is the perfect addition to your summer meal.

This recipe was created out of necessity. Even if you diligently choose zucchini, there seems to be always an escape and grow into a giant level. But when you step out of town and go back to multiple large levels, real despair comes! This has happened so many times over the years that I’m sure I’ve had zucchini in every possible form. This recipe is the ideal way to use up the oversized pumpkin! The advantage of roasted vegetables, especially zucchini, is that the bigger the zucchini. The little ones have jobs, but when prepared like this, the big zucchini fragments are almost like eggplant or portobello mushrooms.

The simple, delicious marinade is packed with seasonings, and it’s the secret here. The taste is very rich, rich, so delicious. After a quick marination, toss the zucchini onto the hot grill until it’s well burned. Next time you go out to the garden and find a giant zucchini – instead of sitting down and crying, just pull out this recipe and start grilling!

Ingredients for making roasted zucchini with lime marinade:

  • squash
  • lime
  • olive oil
  • coriander
  • Oregano
  • Basil
  • garlic
  • Salt and pepper
  • Dried onions
  • Red pepper flakes

How to make the best roasted zucchini:

  1. Make marinade. First make lime marinade. Whisk together lime juice, olive oil and seasoning in a small bowl. You can also add all the ingredients directly to the gallon-sized self-sealing bag and shake to combine.
  2. Slice zucchini. Trim the zucchini and cut into 1/4-inch slices, either longitudinally or circularly.
  3. Marinated zucchini. Add the zucchini to the marinade and sit down while preheating the barbecue.
  4. Roast. Add zucchini to the hot grill with tongs. Cook for 2-3 minutes on each side, or until charred and tender. If needed, drizzle with extra marinade. enjoy!

Can I cook this slice of zucchini in the oven?

Yes! Place the marinated zucchini on a cooling rack placed on a lined baking sheet. Bake in a 425 degree oven for 12-15 minutes or until tender. Bake for 1-2 minutes, or until you get a nice golden brown on the zucchini.

Can I use this marinade on other vegetables?

Absolutely! This rich and delicious marinade is delicious on almost anything. Try it on mushrooms, eggplant, chili peppers, asparagus, cauliflower or new potatoes.

  • Preheat the grill to medium-high.

  • Combine all the ingredients of the marinade in a gallon self-sealed bag. Sealed the top and shake to combine.

  • Cut the ends off the zucchini and cut lengthwise into 1/4-inch-thick slices. Place marinade in a bag. Let them sit for 5 minutes while the grill heats up.

  • Once the grill is hot, remove the zucchini from the marinade with tongs and place on the grill. Cover for 2-3 minutes. Flip the zucchini and cook the other side for 2-3 minutes.

  • Once the zucchini is soft to your liking, remove from the grill and serve immediately. enjoy!
