How to make the perfect cheese tortilla

Perfect cheese spicy cheese with gooey, melted cheese and perfect golden and crispy tortillas. This is where I turn around when we need a quick but delicious meal. That creamy tomato sauce takes it to the next level!
Crispy Homemade Cheese Tortillas
A quick weekday dinner doesn’t have to mean picking up fast food or heating another plate of chicken nuggets. Cheese Mexican jams can be made in 10 minutes, they are cheap and they are totally enjoyable every time! I love whipping this quick creamy tomato coriander lemon ranch – it really takes it to the next level. If I have extra time or want more meals, we fill them with chicken, spinach, chili and onion, mushrooms, black beans or avocado. Either way, this meal is definitely a family favorite!

The ingredients you need to make the perfect cheese burritos:
- Flour Tortillas
- Monterey Jack cheese
- Cheddar cheese
- butter
For Creamy Tomato Coriander Lemon Paste:
- tomato
- Buttermilk
- mayonnaise
- Regular Greek Yogurt
- Ranch seasoning
- garlic
- Lime juice
- Jalapeno


How to make the perfect cheese tortilla:
- Grilled cheese. We like using a combination of Monterey Jack and cheddar.
- Heat a large skillet. Preheat a large skillet over medium heat. Add a teaspoon of butter and spin. Add tortillas (flour or tortillas) to a skillet and sprinkle with about 1/2 cup of chopped cheese. Top with a second tortilla.
- Cook until gold and melt. Cook until the cheese melts and the tortillas at the bottom are nice and golden. Flip and continue cooking for another minute or so until the second side also turns golden.
- Remove from the skillet and slice. Repeat the rest of the cheese and tortillas. Cut the tortilla into wedges (we use a pizza cutter).
- Serve. If needed, serve with cream tomato coriander lemon sauce. Or, serve with salsa, avocado sauce and/or sour cream. enjoy!

If needed, sprinkle cheese, cheese, chili powder, garlic powder or smoked paprika before adding the second tortilla.
What is the best cheese for tortillas?
I like using a mixture of cheddar and Monterey Jack cheese. The idea is really just to use good melted cheese. Other good choices are mozzarella, pepper Jack, Colby Jack, American Cheese, Mexican Cheese Mix or Chihuahua.
Should I put it in a cheese tortilla?
We love a simple cheese made with Mexican jam, but I also load them frequently! This is a great way to increase nutrition and use up all leftovers. Here are our favorite add-ons for Mexico:
- Roasted corn in fire
- Roasted pepper and onion
- Black beans

- Dice avocado
- Leftover taco meat

- Ground beef or chopped beef

How to store the remaining cheese tortillas
Store all remaining Mexican jam in an airtight container in the refrigerator for up to 3 days. When you are ready to eat them, heat them on a foil-lined baking sheet in a preheated 325-degree oven for 10 minutes or until crisp and the cheese melts.

Heat the grill or skillet over medium heat and add 1 teaspoon butter. Add a tortilla to the pan and sprinkle with 1/2 cup chopped cheese; top with another tortilla.

Cook until the cheese melts and the tortilla turns golden, flip halfway. Repeat the remaining ingredients. Cut the tortillas into triangles with pizza. Serve with your favorite salsa sauce.. Enjoy!
Creamy Tomato Coriander Lemon Sauce

Add all ingredients to the blender. Mix together until smooth and creamy. Pour into canned/dressing container and let stand for 30 minutes before serving. It will look thin at first, but will thicken when it cools.
