Homemade Mint Chocolate Ice Cream Recipe (Free dairy and pastoral)

Who doesn’t like ice cream on hot summer days? Even if you avoid dairy, there is no reason to miss it! A few years ago, when we shunned dairy, I first learned to make homemade ice cream. Even though I added some dairy to my diet, this dairy-free mint chocolate ice cream recipe is still a family favorite.
This mint chocolate ice cream gets the cream from coconut milk and avocado. Since making ice cream is on our summer bucket list, I’m glad to have an ice cream recipe full of nutritious and healthy fats for kids to enjoy.

This mint chip ice cream is not cream or heavy cream, but rather cream from avocado.
Avocado has a mild flavor and creamy texture, perfect for desserts. I’ve used them before in Cucumber Lime Vegetable Smoothies and Real Food Clovers Milkshakes. Whenever I find a lot of deals on avocado, I know it’s time to store and make chocolate mint ice cream (and maybe some avocado brownies).
Another reason avocados work so well on mint chocolate ice cream is their natural addition of light greens. It’s not as bright as the green food coloring found in the store-bought version (which could be a good thing!).
Homemade Mint Chocolate Ice Cream with Coconut Milk
To make the ice cream, I just made everything puree except put the chocolate chips in a blender and pour it into the ice cream maker. Once it starts to thicken, I add chocolate chips. If you don’t have an ice cream maker, you can freeze it without it, just stir occasionally until it thickens.
You can use semi-sweet chocolate chips or dark chocolate. You can even use chopped chocolate bars. A small piece of chocolate adds the crunchy texture of the smooth ice cream. I always choose darker chocolate because it has more health benefits and fewer additives.
This homemade version skips granulated sugar and instead uses a hint of raw honey to sweeten it. You can even add your own mint extract from fresh mint.

Make dairy-free mint chocolate ice cream at home with coconut milk, avocado and honey.

Place all ingredients except the chocolate chips in a blender and secure the puree until smooth.

Pour the mixture into an ice cream maker and stir until thickened.

Add the chocolate chips and stir for another 2 minutes.

At this point, the ice cream will have a very soft texture. You can use it as a soft server immediately or pour it into a frozen bowl and freeze until ready to use.

Thaw at room temperature for 10-15 minutes before serving.
