This simple cucumber salad is cool and refreshing and is the perfect side dish for your next barbecue or picnic.

As the temperature rises, I crave something cool, crisp and moisturizing, and this cucumber melon salad takes a place every time. It’s sweet, salty, refreshing and takes only a few minutes to throw together. I use juicy cantaloupe, but you can use honeydew or a combination of both. I also added cucumbers and quickly tossed white balsamic vinegar and creamy sheep cheese. This side dish is available all summer and it’s a great side dish. Cucumber gourd and arugula

  • Balsamic vinegar: White balsamic vinegar, extra virgin olive oil, salt, black pepper, Za’atar (Middle Eastern spice mixture with sumac, thyme, sesame and salt)
  • cucumber: Use regular or English cucumbers for fresh crunch.
  • Hami melon For sweet and juicy elements
  • Feta cheese For rich butter. Buy a piece of feta in water and cut it into small cubes, which is more creamy than pre-damaged cream.
  • Green vegetables: Use watercress or baby arugula.

How to Make Cucumber Gourd Salad

  1. Make vinegar: Mix vinegar, oil, salt, Za’atar (or cumin) and black pepper.
  2. Throw away the remaining ingredients: In a bowl, toss the cucumber, melon and feta with seasoning. Top with vegetables.

  • 4 ounces of feta were chopped about 1 cup – I just bought one of the small pieces and it was perfect. I wouldn’t recommend pre-staining, as it reads a bit dry. Alternatively, feta can be mixed into the dressing, but it will make the visual appeal less.
